At Sunterra, we know quality is key, and that’s why we have developed our own Sunterra Market-Made program — so we can control every aspect of production from beginning to end. Last month we launched the first two items from this new program -fresh pastas and sauces, made from scratch right in our markets.

The inspiration for our pasta program came from a trip to Italy with our senior management and leadership team back in 2017, where we saw firsthand the importance of using simple ingredients, while ensuring they are only the best quality ingredients.

Using only two ingredients – Omega 3 eggs and durum semolina flour sourced directly from Italy – our fresh pasta contains no preservatives, meaning it’s made fresh for you each day and meant to be enjoyed immediately. This high quality, remilled flour gives our pasta its rich golden yellow hue, and adds the perfect coarse texture for the sauce to cling to.

Using a pasta machine sourced from Italy, our fresh pasta cuts include casarecce — a short pasta noodle with curled edges and a groove down the middle; orecchiette — a rounded pasta perfect for sauce-catching; plus lasagna, spaghetti alla chitarra, fettuccine and rigatoni.

Pasta is nothing without the sauce, so our team of chefs got to work to create six flavourful market-made sauces; Alfredo — using the best Parmigiano Reggiano cheese, aged for 24 months, seasoned with garlic, white wine and plenty of fresh cracked black pepper; Bolognese — ground beef simmered with Sunterra Farms bacon and red wine; as well as classic beef, four cheese alfredo, pesto alfredo, and pomodoro sauce.

Another asset to our Sunterra Market-Made program is our new jar redemption initiative. All of our fresh pasta sauces are packaged in a Sunterra branded jar meant to be brought back to our markets and redeemed for a $2 deposit refund.
