Paella

Paella



2 tbsp - olive oil
1 tsp - garlic, chopped
½ cup - calamari rings
1 cup - mussels, de-bearded and cleaned
1 cup - clams, de-bearded and cleaned
2 cups - shrimp, shelled and de-veined (31/40 size)
¼ cup - dry white wine

2 tbsp - olive oil
2 lbs - chicken thighs, bone-in, skin on
1 lb - chorizo, diced
1¼ cups - yellow onion, chopped
2 tbsp - garlic, chopped
1 tbsp - smoked paprika
½ tsp - turmeric
½ cup - crushed tomatoes
3¼ cups - short grain rice
7½ cups - chicken or vegetable stock
1 pinch - saffron
1 cup - roasted red peppers, diced
2 cups - bell peppers, diced

1 cup - artichokes, brined and quartered
1½ cups - green peas
3 tbsp - lemon juice
2 tbsp - extra virgin olive oil
2 tbsp - fresh parsley, chopped
3 tbsp - dry white wine

Heat the oil to high heat in a wide, shallow pan or paella pan if you have one. Add garlic, calamari, mussels, clams and shrimp and sauté for 2 minutes. Add the wine to deglaze the pan and continue cooking for about a minute until the shellfish open. Remove and discard any shells that do not open. Transfer the cooked seafood to a bowl and set aside.

In the same pan, heat oil to high heat and sear the chicken thighs and chorizo on all sides. Add the onion, garlic and spices to the pan and sauté until the onions are golden brown. Turn to medium heat then add the crushed tomatoes and rice and cook for 5 minutes to toast the rice. Add the stock, saffron and peppers and stir well. Cook until the rice absorbs the stock and is almost fully done.

Lower the heat and add the artichokes, peas and cooked seafood. Mix it all together and let simmer for a few minutes until the rice is fully cooked. Turn the heat off and let the paella rest for 5 minutes. In a separate bowl, whisk together lemon juice, olive oil, parsley and wine and sprinkle the mixture over the paella just before serving.
