A Guide to Tomatoes

We love a good versatile veggie and there is probably none more versatile than the mighty tomato. Heck, it's so versatile it's actually a fruit that we call a vegetable. Eaten raw, tomatoes can be earthy, tangy and lightly acidic. When roasted they turn sweeter and have an umami depth of flavour. And thanks to their high water content, they are a natural sauce base for some of the world's tastiest dishes.

Most of our tomatoes come from Gull Valley Greenhouses near Blackfalds, Alberta. We've been working with Phil Tiemstra and his family for over five years and we just love their juicy, picked-at-the-right-time tomatoes. Read their story here. Our heirloom tomatoes are currently sourced from British Columbia.


Beefsteak
Beefsteak Tomatoes
These large, meaty tomatoes are nice and juicy so they are a good choice for salsas, dips and sauces. You can also slice them thin on burgers and sandwiches.


Orange Tomatoes on the Vine
Orange Tomatoes on the Vine
Tomatoes sold on the vine are able to soak in the plant's nutrients until the tomatoes are fully ripe, so you'll get a full-flavoured tomato. We carry red, orange and yellow tomatoes on the vine. All the colours taste similar, but some people say that yellow and orange tomatoes have less acid than their red counterparts.

Romas are dense tomatoes with few seeds that are usually used for sauces, stews and tomato paste. You can also roast them for bruschetta or confit.


San Marzano Tomatoes on the Vine
San Marzano Tomatoes
Gull Valley has recently begun growing San Marzano tomatoes, which are a step drier than Romas and a little longer in shape. Although not grown in the volcanic soil of Mount Vesuvius like you'd find in cans of D.O.P. San Marzanos, these tomatoes have thick flesh and a sweet, balanced flavour.

Grape tomatoes have thick skin and a crunchy texture that makes them great for snacking or adding to salads or skewers. We carry red and yellow grape tomatoes - we like adding yellow tomatoes to our plates for a pop of colour.

Heirloom Tomatoes
Open pollinated and genetically unique, these tomatoes have a delicious earthy flavour. Enjoy them raw with olive oil and salt or in a Caprese salad.
