Don't be intimidated by the fancy name - this fresh cheese is an Italian staple. Fior di latte (pronounced fyor dee lah-teh) is the cow's milk version of classic Italian mozzarella, which is traditionally made with buffalo milk and called mozzarella di bufala. Both cheeses are made by heating the curds until they are stretchy and then hand-kneading (pulling the curd) and shaping to size.
Mozzzarella di bufala is creamier than fior di latte thanks to a higher percentage of milkfat, but by law it can only be produced in a few regions of Italy so you won't find it in every shop. Our mozzarella di bufala is flown in each week to make sure we always have a fresh supply (you want to eat it as soon as possible for the best flavour and texture). But fior di latte? Now that's a cheese that can be made right here in Alberta!
Our fior di latte is made in Calgary by the third-generation cheesemakers at Alberta Cheese. Translated as "milk's flower," fior di latte has an expectedly milky flavour and semi-soft, almost elastic texture. It's an artisan cheese, wholly different from skim milk or low moisture mozzarella bricks in the dairy aisle. You'll find our fior di latte in brine in the deli cheese section - the brine helps the cheese retain its moisture.
Because fior di latte is so soft and fresh, it's delicious on salads and is often served with just tomato and basil as a caprese salad. But melted is where this cheese really shines: add it to pizzas, pastas and even eggs in purgatory for a flawlessly gooey, stringy cheese experience. Hint - tearing the cheese creates more edges than slicing, which will help it melt faster.
