Tenderloin is a lean, quick-cooking cut of pork that is perfect for busy weeknights. Here's how to cook it.
Get Saucy
Because it's so lean, tenderloin loves marinade, sauces and glazes to infuse more flavour into the meat. Marinate for a few hours if possible and baste while cooking. Try this orange mustard glaze recipe.
Don't Overdo It
Pork is safe to eat at an internal temperature of 160F - a hint of pink in the middle is fine! For a whole tenderloin we recommend seasoning it, searing all sides on the stovetop and then roasting it at 375F for about 20 minutes. You can take it out of the oven when the internal temperature hits 155F and allow it to rest under tented tinfoil for about 10 minutes. It will continue to cook as it rests and you'll get a better texture from resting the tenderloin.
Dare to Pair
Pork tenderloin has a mild flavour so you can pair it with almost anything you'd like. Bacon-wrapped tenderloin is one of our favourites, but we also love it with this orange-mustard glaze. Pork with apples or pears is another classic combo, but you can easily experiment with different spices and sauces. And don't forget a crisp white or juicy red wine always goes well.
