All our lamb comes from SunGold Specialty Meats in Innisfail, A.B.
SunGold lamb is certified halal and comes from quality suppliers in Western Canada, but mostly raised in Alberta.
Since Canadian lamb can’t be grass fed throughout the year like it is in New Zealand, SunGold lamb is grain finished for at least 45 days, resulting in tender, juicy, marbled meat that has a milder taste than imported lamb.
Lamb tastes best cooked to medium, about 150-160F. The meat should be pink throughout with a nice crust.
