Meat Department Team Lead - Bower Place - Red Deer

This position requires an individual who demonstrates a quality driven leadership style and is passionate about leading and developing people in a profitable business. This is also a hands-on role. The role focuses on the preparation and presentation of both meats and seafood for sale with abundant, appealing, fresh looking displays. This is also a very service orientated position providing courteous, friendly, knowledgeable and legendary service to customers and team members.

Duties and Responsibilities:

• In communication with store manager you will be responsible for team member hiring, developing, terminations and holding your people accountable.
• Accountable for achieving margins, labor, inventory control, as set out in yearly budget.
• Accountable for ordering and merchandising.
• Great relationship with purchasing department to ensure specifications and pricing from approved suppliers is followed.
• Equipment maintenance and safe workplace, sanitation systems in place and followed.
• Execute great results to every customer that builds rapport and trust.
• All customer requests and questions are addressed and personally followed up on.
• Maintain food safety standards and all company procedures to ensure food safety.
• All cases and shelves throughout the department are clean, well-stocked and rotated.
• Ensure accurate retail pricing and signage.
• Tasters program being followed daily.
• Informed of new products introduced and share with the customers.
• Ensure back areas and coolers well maintained, organized and dated.
• All waste, department transfers, and store transfers documented immediately.
• Assist in monthly inventory.
• Aware of current sales, margins and action plan from team leaders.
• Proper receiving as per company guidelines followed.
• Recipes for marinated items followed for approved ingredients.
• Demonstrate proper use, care and maintenance of equipment.
• Packaging, wrapping and rotation followed.
• Assist in cross merchandise with other departments.
• Execute all cleaning and maintenance schedules.
• Attend all department, store and training meetings.
• Accept and check all products from receiver.
• Answer telephone with proper etiquette and urgency.
• Wash and sanitize utensils when necessary.
• Break, trim, bone, cut, scrape and platter various cuts of meat and seafood.
• Skewer meat, poultry items for kabobs.
• Grind meats with temperature tracking.
• Perform other duties delegated by team leaders and store leaders.
• Available for night and weekends.

Physical Requirements
• Able to lift up to 50 lbs. with proper lifting techniques.
• Ability to physically cut and prepare cuts of meat throughout each shift
Qualifications:
Skills & Knowledge
• Team player and believer of “it’s your business”, enthusiastic.
• Superior knowledge of primal cuts.
• Excellent merchandiser.
• Knowledge and experience with inventories, statements, margin and labor controls.
• Knowledge of cooking techniques for various cuts and product.
• Passion for fresh foods.
• Customer service orientated, and likes to create great experiences.
• Self-motivated and problem solver.
• Institutional meat or kitchen training, or relevant experience.
• Math skills.
• Familiar with digi scale operation.
• Sanitation certification.

Educational Requirements
• Some supervisory experience required
• Meat Cutting certification is considered and asset, and not required if the individual has 5 years of experience in meat cutting
