Valentine's Day Feasts

Heat and Eat!

    APPETIZER 

    Soleterra d’Italia Calabrese piccante salami, bocconcini and tomato salad with white balsamic vinaigrette  


    SOUP 
    Tomato fennel soup  


    ENTREES
    Beef Wellington with jus, Lyonnaise fingerling potatoes and roasted vegetables 
     
    Or 
     Soleterra d’Italia prosciutto and Parmigiano Reggiano stuffed chicken with sage lemon sauce, Lyonnaise fingerling potatoes and roasted vegetables 
     
    Or 
    Eggplant, ricotta and walnut rollatini with Lyonnaise fingerling potatoes and roasted vegetables 
     
    Or
    Southwestern citrus salmon with rice pilaf and roasted vegetables  
     

    DESSERT 
    Sinful chocolate cake 



    Reheating Instructions

    SOUP
    Stovetop: Place the soup in a pot and slowly bring to a simmer. Stir frequently. You may need to add a small amount of milk or water if the soup becomes too thick.
    Microwave: Transfer the soup to a microwave safe container, cover and microwave on medium for approximately 1½ to 2 minutes.

    ENTREE
    Oven: Transfer the meat, vegetables and potatoes into oven safe containers and cover loosely with aluminum foil. Place in a preheated oven at 350F. Timing:

    Beef Wellington – 6 to 8 minutes       
    Soleterra d’Italia prosciutto and Parmigiano Reggiano stuffed chicken – 8 to 10 minutes     
    Southwestern citrus salmon – 8 to 10 minutes     
    Eggplant, ricotta and walnut rollatini – 8 to 10 minutes     
    Potatoes and Rice - 14 to 16 minutes
    Vegetables - 6 to 8 minutes

    Microwave: Transfer the entrée to a microwave safe container and cover. Microwave on medium for approximately 2 minutes.

    SAUCE
    Stovetop: Simmer in a saucepan.
    Microwave: transfer the sauce to a microwave safe container, cover and microwave on medium for approximately 1 minute.
