Sunterra Farms Mango Chipotle Baby Back Ribs

(makes 1.5 litres)
1 tbsp – olive oil
½ cup – red onions, chopped
2 tsp – ginger, chopped
2 tsp – garlic, chopped
4 cups – fresh mango, diced into ¼ inch pieces
1 tbsp – chipotle pepper chopped
½ cup – brown sugar
1 cup – mango juice
2 cups – Sunterra barbeque sauce
2 tbsp – chopped green onions
1 tbsp – cilantro

1 kg – Sunterra Farms baby back ribs
3 cups – water or pork or beef stock
3 cups – beer
2 – bay leaves
3 – garlic cloves, roughly chopped
¼ – onion, sliced
Salt and cayenne chili to taste

Heat oil in a pan on medium heat and sauté the onions, ginger and garlic till onions are translucent. Add the diced mango, chipotle pepper and brown sugar. Let the mango caramelize a bit then add the mango juice and barbeque sauce and bring to a boil. Lower the heat and simmer 15 to 20 minutes.

Let the sauce cool slightly and then fold in the green onions and cilantro.

Season ribs with salt and pepper and place in a pot. Add remaining ingredients and simmer for 1 to 1.5 hours until the meat falls off the bones with minimal resistance. Remove the pot from heat and let the ribs cool in the liquid. Drain and cut the ribs into individual riblets.

Heat ½ cup of the mango chipotle sauce in a pan and add 6 to 8 ribs. Cook on medium heat so the sauce reduces and sticks to the ribs.
Garnish with chopped scallions and cilantro.

Alternatively, you can brush the ribs with sauce and grill on a barbeque for 5 to 6 minutes each side on medium heat until the sauce begins to blister and the meat becomes slightly charred. Cut ribs into sections along the bone and serve.
