¾ cup – pure honey
3 tbsp – grainy Dijon mustard
1 tsp – fresh garlic, chopped
2 tsp – lemon juice
3 kg – Sunterra Farms spiral ham
1 tbsp – fresh parsley, chopped
Warm the honey slightly in a sauce pan and add in the mustard, garlic and lemon juice. Stir and bring it to a gentle simmer.
Brush the ham with the glaze liberally so the flavours soak into the meat. Place the ham in a 2½-inch deep roasting pan. Cover with aluminum foil to retain moisture.
Roast the ham in a preheated oven at 325F, about 10 to 12 minutes per pound. Baste the ham with the glaze a couple of times during roasting. To get a crisp outer layer, you can remove the foil in the last 15 minutes of cooking and increase the temperature to 400F.
Take the ham out of the oven when its internal temperature reaches 160F. Glaze one last time and sprinkle the parsley on top. Let rest for a few minutes before carving.
