5½ cups - all purpose flour
2 tbsp - baking soda
½ tsp - salt
6½ - very ripe bananas, peeled
3 cups - sugar
1¾ cups - buttermilk
1½ cups - liquid egg
¾ cup - canola oil
Preheat oven to 350F.
In a small bowl stir together flour, baking soda and salt. Set aside.
In a large mixing bowl cream together the bananas and sugar on medium speed until the mixture is smooth. Scrape the sides of the bowl to ensure the ingredients are well mixed.
Turn the mixer to low and slowly add the buttermilk and eggs. Mix until incorporated then slowly add the canola oil and mix until incorporated.
Next fold the dry ingredients into your batter. Do not over mix. Pour the batter evenly into 3 greased 9 x 5 loaf pans and bake 50 to 60 minutes until golden brown. A toothpick inserted into the centre should come out clean. Let loaves cool before slicing.
