Shoyu salmon rice bowl

Shoyu Salmon Rice Bowl



1 cup - ketjap manis
1 tbsp - fresh ginger, peeled and grated
1 tbsp - brown sugar
1 tbsp - pineapple, finely diced
1 tbsp - green onion, chopped
1 tsp - garlic, pureed
1 tsp - lemon juice
1 tsp - sesame oil
¾ tsp - paprika, ground
½ tsp - oregano, dried
pinch - red pepper flakes
2 tbsp - water
¾ tsp - corn starch
4 - salmon fillets, 100g each
1 tbsp - pineapple, cut into thin slices
4 cups - sticky rice, cooked
½ cup - carrots, julienne
½ cup - bok choy, sautéed
¼ cup - pineapple, chopped
¼ cup - green onions, sliced
2 tsp - sesame seeds, toasted

Preheat oven to 325F.

Combine ketjap manis, ginger, brown sugar, pineapple, onion, garlic, lemon juice, sesame oil, paprika, oregano and red pepper flakes in a shallow sauce pan. Add freshly cracked black pepper to taste. Bring to a gentle boil over medium heat. In the meantime, whisk together water and corn starch in a small bowl. Add to the boiling marinade in a gentle stream while stirring to make sure there are no lumps. Remove from heat and let marinade cool to room temperature.

Place the salmon fillets skin-side down on a roasting tray. Brush the shoyu sauce all over each fillet and sprinkle 1 tbsp of pineapple on the salmon. Roast in the oven until salmon is cooked, about 5 to 8 minutes.

To build, add one cup of rice to each bowl. Place the carrots and bok choy on one side of the bowl and a cooked salmon fillet on the other side. Drizzle leftover shoyu sauce on top and garnish with chopped pineapple, green onions and sesame seeds.
