Shoyu pork belly

Shoyu Pork Belly

1 cup ketjap manis
1 tbsp fresh ginger, peeled and grated
1 tbsp brown sugar
1 tbsp pineapple, finely diced
2 tbsp green onion, chopped
1 tsp garlic, pureed
1 tsp lemon juice
1 tsp sesame oil
¾ tsp paprika, ground
½ tsp oregano, dried
pinch red pepper flakes
2 tbsp water
¾ tsp corn starch
1 kg Sunterra Farms pork belly
1 tbsp pineapple, cut into thin slices

Combine ketjap manis, ginger, brown sugar, pineapple, 1 tbsp green onion, garlic, lemon juice, sesame oil, paprika, oregano and red pepper flakes in a shallow sauce pan. Add freshly cracked black pepper to taste. Bring to a gentle boil over medium heat. In the meantime, whisk together water and corn starch in a small bowl. Add to the boiling marinade in a gentle stream while stirring to make sure there are no lumps. Remove from heat and let marinade cool to room temperature.

Score the pork belly on the skin side about 1/4 -inch deep in a diamond pattern. Put it in a 3-inch-deep roasting pan and pour the marinade over top. Rub the marinade into the meat, cover and refrigerate overnight.

The next day, cover the pork belly with a lid or tinfoil and roast at 325F for about 1.5 hours until tender. Baste with marinade every 20 minutes. Once tender, remove the lid, baste and add pineapple slices on top. Increase the oven temperature to 375F and roast until the pork is lightly caramelized on top, about 15 minutes. Remove from heat and let it rest 10 minutes before carving. Garnish with 1 tbsp green onion before serving.
