2 tbsp - olive oil
2 tsp - garlic, minced
1 tbsp - rosemary, chopped
to taste - sea salt and freshly cracked pepper
12 - SunGold lamb loin chops
In a small bowl, make a marinade with olive oil, garlic, rosemary, salt and pepper. Coat lamb chops in the marinade and refrigerate for four hours or overnight.
Preheat the oven to 350F. Preheat a skillet on high heat and sear the lamb chops until brown, about 1½
minutes per side. Finish cooking the chops in the oven until desired internal temperature (145F for medium-rare, 170F for well done). Remove from heat and let rest a few minutes before serving.
