Al Pastor Mexican Rice Bowl

1.2 kg - Sunterra Farms pork collar
1 cup - yellow onion, sliced
1 cup - pineapple, peeled, cored and thinly sliced

SEASONING SPICE
3 tbsp - chili powder
3 tsp - paprika
2 tsp - garlic powder
2 tsp - cumin powder
2 tsp - white wine vinegar
2 tsp - canola oil
2 tsp - fresh lemon juice
½ tsp - black pepper, freshly cracked
Salt to taste

1 tbsp - olive oil
1 cup - yellow onion, sliced
1 tsp - garlic, chopped
1 cup - tomatoes, sliced
¾ cup - bell peppers, julienned

8 cups - cooked rice seasoned with lime and cilantro
1 cup - shredded cheese like queso duro
2 cups - pineapple mango salsa or pico de gallo
½ cup - jalapenos, chopped
1 cup - cilantro, chopped
8-12 - lime wedges

Thinly slice the pork collar across the grain. Combine the onion, pineapple and seasoning spices and toss with the sliced pork. Once all the slices are evenly seasoned, marinate four hours or overnight.

Heat oil in a large cast iron skillet and fry the pork in small batches until browned on both sides, about a minute on each side. Transfer to a cutting board, rest for few minutes and slice into bite sized pieces.

In the same skillet, sauté the onions and garlic for a minute then add the tomatoes and cook for another minute. Add the peppers and cooked pork back in and simmer for a minute. Check seasoning.

To serve, portion warm rice into each bowl. Top each bowl with two ounces of pork and shredded cheese, salsa, jalapenos and cilantro to taste. Serve with a lime wedge on the side.
