If you haven’t tried coppa, you’re doing cured meats wrong. Similar to prosciutto, coppa is made from a whole muscle (i.e. not ground) that is brined and dry cured for several months. But rather than pork leg, coppa is made from the deliciously marbled shoulder, giving it a deep red colour and bold, rich flavour. Eat it sliced paper thin.
